Tex-Mex Chicken and Rice Bake

Ingredients
- 1 1/4 lb boneless chicken thighs
- 1 1/2 cup long grain white rice
- 3 cup chicken broth
- 8 oz canned diced green chiles
- 8 oz frozen sweet corn
- 8 oz shredded monterey jack
- 1 yellow onions
- 1 1/2 tsp ground cumin
- 2 tsp chili powder
- 2 tbsp extra virgin olive oil
- 1 1/2 tsp kosher salt
Method
Heat the oven to 375F.
Cut the chicken into bite-size pieces and brown in the oil in an oven-safe skillet over medium-high, about 5 minutes. Season with cumin, chili powder, and salt.
Stir in the diced onion and cook 3 minutes, then add the rice and toast for 1 minute.
Pour in the broth and stir in the green chiles and corn. Bring to a simmer.
Cover tightly and bake 30 minutes, until the rice is tender and the liquid absorbed.
Scatter the Monterey Jack over the top and return uncovered for 5 minutes until melted. Rest 5 minutes before serving.
