Cheese and Green Chile Enchiladas
Corn tortillas rolled around three cheeses and green chiles, baked in red enchilada sauce.

Ingredients
- 12 corn tortillas
- 20 oz canned red enchilada sauce
- 8 oz shredded monterey jack
- 6 oz shredded cheddar cheese
- 8 oz canned diced green chiles
- 1 yellow onions
- 3 tbsp vegetable oil
- 1 1/2 tsp ground cumin
- 1/2 cup sour cream(optional)
- 1/2 bunch cilantro(optional)
Method
Heat the oven to 375F and spread a thin layer of enchilada sauce in a baking dish.
Cook the diced onion in 1 tablespoon oil until soft, 5 minutes, then stir in the green chiles and cumin.
Warm the tortillas one at a time in the remaining oil for a few seconds per side so they roll without cracking.
Fill each tortilla with the onion-chile mixture and most of the cheeses, roll, and set seam-side down in the dish.
Pour the remaining sauce over the top and scatter with the reserved cheese.
Bake 22 to 25 minutes until bubbling, then rest 5 minutes and top with sour cream and cilantro.
