Ingredients

  • 1 1/4 cup brown/green lentils
  • 4 naan flatbread
  • 3 cup vegetable broth
  • 1 taco seasoning packet
  • 1 yellow onions
  • 12 oz jarred salsa
  • 2 avocado
  • 2 lime
  • 3 tbsp extra virgin olive oil
  • 1 1/2 tsp kosher salt
  • 1/2 bunch cilantro(optional)

Method

  1. Cook the diced onion in 2 tablespoons oil in a saucepan over medium until soft, 6 minutes.

  2. Add the rinsed lentils, taco seasoning, and vegetable broth and bring to a boil.

  3. Lower the heat and simmer 22 to 25 minutes until the lentils are tender and the mixture is thick and scoopable. Season with salt.

  4. Brush the naan with the remaining oil and warm in a dry skillet or a 400F oven until hot and crisp at the edges.

  5. Spoon the lentils over each flatbread.

  6. Top with salsa, sliced avocado, cilantro, and a hard squeeze of lime.
