Chicken and Green Chile Tortilla Bake

Ingredients

  • 1 1/2 lb boneless chicken breast
  • 10 1/2 oz condensed cream of chicken soup
  • 10 oz canned diced tomatoes with green chiles
  • 10 corn tortillas
  • 6 oz shredded cheddar cheese
  • 1 yellow onions
  • 1 green bell pepper
  • 2 tbsp unsalted butter
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp kosher salt

Method

  1. Simmer the chicken breasts in salted water for 15 minutes until cooked through, then shred with two forks.

  2. Heat the oven to 350F. Melt the butter in a skillet and cook the diced onion and pepper until soft, 6 minutes.

  3. Stir in the soup, the undrained tomatoes with green chiles, the chili powder, cumin and salt. Simmer 3 minutes, then fold in the shredded chicken.

  4. Tear the tortillas into wide strips. Spread a third of the chicken mixture in a 9x13 dish, cover with half the tortillas, and repeat, finishing with chicken on top.

  5. Scatter the cheddar over and bake 30 minutes, until it is bubbling at the edges and browned in patches.

  6. Let it settle 10 minutes before cutting so the layers hold.
