Ingredients

  • 1 1/4 lb ground turkey (93% lean)
  • 20 oz canned red enchilada sauce
  • 10 corn tortillas
  • 15 oz canned black beans
  • 8 oz frozen sweet corn
  • 8 oz shredded mexican cheese blend
  • 1 yellow onions
  • 2 tsp ground cumin
  • 2 tbsp extra virgin olive oil
  • 1 1/2 tsp kosher salt
  • 1/2 bunch cilantro(optional)

Method

  1. Heat the oven to 400F.

  2. Brown the turkey with the diced onion in the oil in an oven-safe skillet over medium-high, 8 minutes. Season with cumin and salt.

  3. Stir in the drained black beans, corn, and enchilada sauce and bring to a simmer.

  4. Tear the corn tortillas into strips and fold them into the skillet so they soften into the sauce.

  5. Scatter the cheese over the top and bake 12 to 15 minutes until bubbling and browned in spots.

  6. Rest 5 minutes, scatter with cilantro, and scoop into bowls.
