Chicken Cacciatore
Braised chicken thighs with peppers, mushrooms and tomatoes, good over any pasta you have.

Ingredients
- 2 lb bone-in chicken thighs
- 2 tbsp extra virgin olive oil
- 1 yellow onions
- 1 red bell pepper
- 8 oz cremini (baby bella) mushrooms
- 4 clove garlic
- 28 oz canned crushed tomatoes
- 2 tsp italian seasoning blend
- 1/4 tsp crushed red pepper flakes
- 1 bay leaves
- 12 oz rigatoni
Method
Season the chicken with salt and brown it skin side down in the olive oil in a deep skillet, about 6 minutes. Set it aside.
In the same pan cook the sliced onion, pepper and mushrooms until the mushrooms release their liquid and it cooks off.
Add the garlic, italian seasoning and pepper flakes for one minute.
Pour in the tomatoes, drop in the bay leaf and return the chicken skin side up.
Cover partly and simmer 30 minutes, until the chicken is tender and the sauce has thickened.
Boil the rigatoni meanwhile and serve the chicken and sauce over it.
