Chicken with Mushroom Pan Sauce

Ingredients
- 1 1/2 lb boneless chicken breast
- 8 oz cremini (baby bella) mushrooms
- 12 oz egg noodles
- 1/2 cup dry white wine (cooking)
- 1 cup chicken broth
- 4 tbsp unsalted butter
- 1/3 cup all-purpose flour
- 2 shallots
- 2 tbsp extra virgin olive oil
- 1 1/2 tsp kosher salt
- 1/4 bunch fresh flat-leaf parsley(optional)
Method
Slice the chicken into thin cutlets, season with salt, and dredge lightly in the flour.
Heat the olive oil and 1 tablespoon butter in a large skillet over medium-high. Brown the cutlets 4 minutes per side, then move to a plate.
Add the sliced mushrooms to the pan and cook 6 minutes without stirring much, so they brown. Add the minced shallots for 2 minutes.
Pour in the wine and scrape the pan clean. Let it reduce by half, then add the broth and simmer 4 minutes.
Swirl in the remaining butter to finish the sauce and return the chicken to warm through.
Boil the egg noodles and serve the chicken and sauce over them, scattered with parsley.
