Sheet-Pan Chicken Shawarma with Pita
Warmly spiced chicken and onions roasted hard on a sheet pan, piled into pita with yogurt sauce.

Ingredients
- 1 1/2 lb boneless chicken thighs
- 1 red onion
- 3 tbsp extra virgin olive oil
- 2 tsp ground cumin
- 2 tsp paprika
- 1/2 tsp ground turmeric
- 4 clove garlic
- 1 lemon
- 3/4 cup plain greek yogurt
- 2 tbsp tahini
- 4 pita bread
- 1 cucumber
Method
Heat the oven to 450F. Slice the chicken into strips and the onion into thick wedges.
Toss both with the olive oil, cumin, paprika, turmeric, half the minced garlic, salt and the juice of half the lemon.
Spread on a sheet pan in a single layer and roast 22 to 25 minutes, until the edges are dark.
Stir the yogurt, tahini, remaining garlic, remaining lemon juice and a pinch of salt into a sauce.
Warm the pita in the oven for the last 2 minutes.
Fill the pita with chicken, onion and sliced cucumber and spoon the sauce over.
