Greek Lemon Chicken and Potatoes

Bone-in thighs and potato wedges roast together in one pan with lemon, garlic and oregano until the edges go crisp.

Ingredients

  • 2 lb bone-in chicken thighs
  • 1 1/2 lb yukon gold potatoes
  • 3 tbsp extra virgin olive oil
  • 2 lemon
  • 5 clove garlic
  • 2 tsp dried oregano
  • 2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/2 cup chicken broth

Method

  1. Heat the oven to 425F. Cut the potatoes into thick wedges and pile them in a large roasting pan.

  2. Whisk the olive oil, juice of both lemons, minced garlic, oregano, salt and pepper in a bowl.

  3. Toss the potatoes with half the dressing, then nestle the chicken thighs on top skin side up and spoon the rest over them.

  4. Pour the broth into the corner of the pan so it does not wash the seasoning off the chicken.

  5. Roast 45 to 50 minutes, until the chicken skin is brown and the potatoes are tender.

  6. Spoon the pan juices over everything and rest 5 minutes before serving.
