Turmeric Poha-Style Breakfast Rice
Leftover-friendly rice tossed with mustard oil heat, peanuts, onion, and lime. Light, cheap, ten minutes.

Ingredients
- 1 1/2 cup long grain white rice
- 3 tbsp vegetable oil
- 1 yellow onions
- 1 jalapeño peppers
- 3/4 tsp ground turmeric
- 1/2 cup roasted peanuts
- 6 oz frozen green peas
- 1 1/2 tsp kosher salt
- 2 lime
- 1/2 bunch cilantro(optional)
Method
Cook the rice according to package directions and spread it on a tray to cool and dry out. Day-old rice works even better.
Fry the peanuts in the oil over medium heat for 2 minutes until golden, then lift them out with a slotted spoon.
Add the diced onion and chopped chile to the same oil and cook 4 minutes until translucent.
Stir in the turmeric and the peas and cook 2 minutes.
Fold in the rice and the salt, tossing gently so the grains stay separate and turn evenly yellow. Warm through for 3 minutes.
Off the heat, add the fried peanuts, a hard squeeze of lime, and cilantro.
