Roasted Cauliflower and Poblano Tacos

Ingredients
- 1 cauliflower
- 2 poblano peppers
- 15 1/4 oz canned sweet corn
- 8 corn tortillas
- 1 red onion
- 1 avocado
- 2 lime
- 3 tbsp extra virgin olive oil
- 2 tsp ground cumin
- 2 tsp chili powder
- 1 1/2 tsp kosher salt
- 1/2 bunch cilantro(optional)
Method
Heat the oven to 450F. Break the cauliflower into small florets and cut the poblanos into wide strips.
Toss both on a baking sheet with the oil, cumin, chili powder and salt. Spread them out so they roast rather than steam.
Roast 25 to 30 minutes, turning once, until the cauliflower is browned at the edges and tender at the stem.
Add the drained corn to the hot pan for the last 5 minutes so it takes on a little colour.
Warm the tortillas in a dry pan until they are flexible and smell toasted.
Fill them with the roasted vegetables, add thin slices of red onion and avocado, and squeeze lime over. Finish with cilantro.
