Poblano and Sweet Corn Chowder
A creamy pale-gold chowder thick with corn and soft potato, dark flecks of roasted poblano through it, finished with lime and cilantro.

Ingredients
- 2 poblano peppers
- 15 1/4 oz canned sweet corn
- 1 lb russet potatoes
- 1 yellow onions
- 4 cup chicken broth
- 1 cup half and half
- 3 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 3 clove garlic
- 1 tsp ground cumin
- 1 1/2 tsp kosher salt
- 1 lime
- 1/2 bunch cilantro(optional)
Method
Char the poblanos directly over a gas flame or under the broiler until blackened all over, about 8 minutes. Put them in a bowl, cover, and let them steam 10 minutes, then rub off the skins, seed them, and chop.
Melt the butter in a heavy pot. Cook the diced onion and minced garlic over medium heat until translucent, 6 minutes.
Sprinkle in the flour and cumin and stir for 1 minute, then pour in the broth a little at a time, whisking so no lumps form.
Add the potatoes cut into half-inch dice. Simmer 15 minutes until they are tender enough to crush against the side of the pot.
Stir in the drained corn, the chopped poblano, the half and half and the salt. Warm through without letting it boil, about 5 minutes.
Finish with a squeeze of lime and chopped cilantro over each bowl.
