Ingredients

  • 1 1/4 lb frozen raw shrimp
  • 12 corn tortillas
  • 14 oz coleslaw mix (bagged)
  • 4 tbsp mayonnaise
  • 3 lime
  • 2 avocado
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 2 tbsp extra virgin olive oil
  • 1 1/2 tsp kosher salt
  • 1/2 bunch cilantro(optional)

Method

  1. Thaw the shrimp, pat dry, and toss with the chili powder, cumin, and half the salt.

  2. Whisk the mayonnaise with the juice of one lime and the remaining salt, then toss it through the coleslaw mix. Let it sit while you cook.

  3. Heat the olive oil in a skillet over high and cook the shrimp 90 seconds per side until pink and just firm.

  4. Warm the tortillas in a dry pan.

  5. Fill each tortilla with slaw, shrimp, and sliced avocado.

  6. Finish with cilantro and a squeeze of the remaining limes.
