Ingredients

  • 1 1/4 lb ground turkey (93% lean)
  • 1 1/2 cup long grain white rice
  • 15 oz canned black beans
  • 8 oz frozen sweet corn
  • 1 taco seasoning packet
  • 1 yellow onions
  • 1 tbsp extra virgin olive oil
  • 2 avocado
  • 2 lime
  • 1/2 bunch cilantro(optional)

Method

  1. Cook the rice, then fluff it with the juice of one lime and chopped cilantro.

  2. Heat the olive oil over medium-high and cook the diced onion 4 minutes.

  3. Add the ground turkey and brown it, breaking it up, about 7 minutes.

  4. Stir in the taco seasoning and 1/2 cup water and simmer 3 minutes.

  5. Warm the drained black beans and the corn in a small pan or the microwave.

  6. Build bowls with rice, turkey, beans, corn, sliced avocado, and a squeeze of lime.
