Ingredients

  • 3 lb sweet potatoes
  • 1 lb ground turkey (93% lean)
  • 2 tbsp extra virgin olive oil
  • 1 yellow onions
  • 1 taco seasoning packet
  • 15 oz canned black beans
  • 5 oz shredded mexican cheese blend
  • 8 oz jarred salsa
  • 1/2 cup sour cream(optional)
  • 1/2 bunch cilantro(optional)

Method

  1. Heat the oven to 425F. Prick the sweet potatoes, rub them with a little oil and bake 45 to 50 minutes until soft.

  2. Meanwhile brown the turkey with the diced onion in the remaining oil.

  3. Stir in the taco seasoning and a half cup of water and simmer 3 minutes.

  4. Add the drained black beans and warm through.

  5. Split the hot sweet potatoes and fluff the insides with a fork.

  6. Fill with the turkey mixture, top with cheese, salsa, sour cream and cilantro.
