Ingredients

  • 1 1/4 lb flank steak
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow onions
  • 3 tbsp vegetable oil
  • 1 taco seasoning packet
  • 2 lime
  • 8 flour tortillas (taco size)
  • 1 avocado(optional)
  • 1/2 bunch cilantro(optional)

Method

  1. Heat the oven to 450F. Slice the peppers and onion and toss on a sheet pan with 2 tbsp oil and half the taco seasoning.

  2. Roast the vegetables 10 minutes while you rub the steak with the remaining oil and seasoning.

  3. Push the vegetables to the sides, lay the steak in the middle and roast 10 to 12 minutes for medium.

  4. Rest the steak 5 minutes, then slice thinly against the grain.

  5. Squeeze the lime over everything and toss the slices through the peppers.

  6. Warm the tortillas and serve with avocado and cilantro.
