Baked Eggs on Cheesy Toast
Eggs cracked into wells of Swiss-covered sourdough and baked until the yolks just set.

Ingredients
- 1 sourdough loaf
- 8 large eggs
- 8 oz sliced swiss cheese
- 3 tbsp unsalted butter
- 2 tbsp dijon mustard
- 5 oz baby spinach
- 1 1/2 tsp kosher salt
- 1 tsp ground black pepper
- 1/2 bunch green onions / scallions(optional)
Method
Heat the oven to 400F. Cut four very thick slices of sourdough and butter both sides.
Toast the slices on a sheet pan for 5 minutes until dry and lightly golden.
Spread each with Dijon, press a handful of spinach on, and lay the Swiss over the top.
Make two shallow wells in the cheese on each slice and crack an egg into each.
Season with salt and pepper and bake 10 to 12 minutes until the whites are set and the yolks still soft.
Scatter with sliced scallions and serve immediately.
