Summer Vegetable Stew with Beans
Eggplant, zucchini and peppers stewed with tomatoes and white beans, good hot or warm.

Ingredients
- 1 eggplant
- 2 zucchini
- 2 red bell pepper
- 1 yellow onions
- 5 tbsp extra virgin olive oil
- 5 clove garlic
- 28 oz canned diced tomatoes
- 15 oz canned cannellini beans
- 2 tsp italian seasoning blend
- 1/2 oz fresh basil(optional)
Method
Cut the eggplant, zucchini and peppers into large chunks.
Brown the eggplant in 3 tbsp olive oil over high heat until it takes color, then set it aside.
Cook the onion and peppers in the remaining oil 6 minutes, then add the zucchini for 4.
Add the garlic and italian seasoning, then the tomatoes and a good pinch of salt.
Return the eggplant, add the drained beans and simmer 25 minutes, until everything is soft and the liquid has reduced.
Taste for salt and finish with torn basil and a drizzle of olive oil.
