Ingredients

  • 2 lb beef stew meat
  • 1 cup dry red wine (cooking)
  • 3 cup beef broth
  • 1 lb carrots
  • 1 1/2 lb yukon gold potatoes
  • 1 yellow onions
  • 2 oz tomato paste
  • 4 clove garlic
  • 1/4 cup all-purpose flour
  • 1/3 oz fresh thyme
  • 2 bay leaves
  • 2 tbsp extra virgin olive oil
  • 2 tsp kosher salt
  • 1 tsp ground black pepper

Method

  1. Pat the beef dry, season with the salt and pepper, and toss it in the flour until lightly coated.

  2. Heat the oil in a heavy pot over medium-high. Brown the beef in two batches, giving each piece room, about 6 minutes a batch. Move it to a plate.

  3. Lower the heat and cook the diced onion until soft, 5 minutes. Stir in the tomato paste and minced garlic and cook 1 minute more.

  4. Pour in the wine and scrape the browned bits off the bottom of the pot. Let it bubble for 3 minutes.

  5. Return the beef with the broth, thyme sprigs and bay leaves. Cover and simmer very gently for 90 minutes.

  6. Add the carrots in thick coins and the potatoes in large chunks. Simmer uncovered 35 to 40 minutes more, until the beef pulls apart and the gravy has thickened. Fish out the bay leaves before serving.
