Salmon and Potato Salad Plate
Roasted salmon flaked over warm potatoes and green beans with a mustard vinaigrette.

Ingredients
- 1 1/2 lb frozen salmon fillets
- 1 1/2 lb yukon gold potatoes
- 3/4 lb fresh green beans
- 2 tbsp dijon mustard
- 3 tbsp red wine vinegar
- 6 tbsp extra virgin olive oil
- 2 shallots
- 2 1/2 tsp kosher salt
- 1 tsp ground black pepper
- 2 oz capers(optional)
Method
Heat the oven to 425F. Thaw the salmon and pat dry.
Halve the potatoes and boil in salted water 15 minutes until tender. Add the green beans for the last 3 minutes, then drain everything.
Set the salmon on an oiled sheet pan, season with salt and pepper, and roast 12 to 14 minutes until it flakes.
Whisk the Dijon, red wine vinegar, minced shallot, olive oil, and salt into a vinaigrette.
Toss the warm potatoes and beans with two-thirds of the vinaigrette so they drink it in.
Flake the salmon over the top, spoon on the rest of the dressing, and scatter with capers.
