Homemade Fish Sticks with Oven Fries
Panko-crusted cod strips baked crisp with oven fries and a lemon dipping sauce.

Ingredients
- 1 1/2 lb cod fillets (frozen)
- 2 1/2 cup panko breadcrumbs
- 2 large eggs
- 1/2 cup all-purpose flour
- 24 oz frozen french fries
- 5 tbsp mayonnaise
- 1 lemon
- 4 tbsp extra virgin olive oil
- 1 1/2 tsp paprika
- 2 tsp kosher salt
Method
Heat the oven to 425F. Spread the fries on one sheet pan and bake 25 to 30 minutes, turning once.
Thaw the cod fully, pat very dry, and cut into finger-size strips. Season with salt.
Mix the panko with the paprika and 3 tablespoons olive oil until the crumbs look damp.
Coat each strip in flour, then beaten egg, then the panko, pressing well, and set on a second oiled pan.
Bake 14 to 16 minutes, turning once, until golden and firm.
Stir the mayonnaise with lemon juice for dipping and serve with the fries.
