Ingredients

  • 2 avocado
  • 1 sourdough loaf
  • 4 large eggs
  • 1 lemon
  • 1 tsp crushed red pepper flakes
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper

Method

  1. Lower the eggs into boiling water and cook 7 minutes for a set white and a jammy yolk. Move them to cold water, then peel.

  2. Toast four thick slices of sourdough until well browned.

  3. Mash the avocado with lemon juice, salt, and pepper, leaving it chunky rather than smooth.

  4. Spread it thickly over the toast, right to the edges.

  5. Halve the eggs and lay them on top.

  6. Drizzle with olive oil and finish with pepper flakes and a last pinch of salt.
