Breakfast-for-Dinner Buttermilk-Style Pancakes

Ingredients
- 2 cup all-purpose flour
- 6 large eggs
- 2 cup whole milk
- 4 tsp baking powder
- 1/4 cup granulated white sugar
- 6 tbsp unsalted butter
- 12 oz frozen mixed berries
- 4 tbsp pure maple syrup
- 2 tsp vanilla extract
- 1 tsp table salt
Method
Whisk the flour, baking powder, sugar, and salt together.
Beat 2 eggs with the milk, vanilla, and 4 tablespoons melted butter, then stir into the dry ingredients until just combined and still lumpy.
Simmer the frozen berries with the maple syrup in a small pan for 6 minutes until saucy.
Cook the pancakes on a buttered griddle over medium, about 2 minutes per side, until puffed and golden.
Scramble the remaining 4 eggs in the leftover butter over low heat until just set.
Stack the pancakes, spoon over the berry syrup, and serve the eggs alongside.
