Ingredients

  • 1 1/2 lb boneless pork chops
  • 3 tbsp pure maple syrup
  • 2 tbsp dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 1/2 lb carrots
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried thyme
  • 2 tsp kosher salt
  • 1 tsp ground black pepper

Method

  1. Heat the oven to 425F. Cut the carrots into batons, toss with 1 tablespoon oil, thyme, and salt, and roast 20 minutes.

  2. Whisk the maple syrup, Dijon, and cider vinegar together.

  3. Pat the chops dry and season both sides with salt and pepper.

  4. Heat the remaining oil in a grill pan over medium-high and sear the chops 4 minutes per side.

  5. Brush the chops with the maple mustard, turn once more, and cook 1 to 2 minutes until glazed and just cooked through.

  6. Rest 5 minutes, then serve with the carrots and any remaining glaze.
