Ingredients

  • 1 1/2 lb pork tenderloin
  • 1 1/2 lb sweet potatoes
  • 3/4 lb fresh green beans
  • 3 tbsp extra virgin olive oil
  • 2 tsp smoked paprika
  • 1 1/2 tsp garlic powder
  • 1 tbsp brown sugar
  • 2 tsp kosher salt
  • 1/2 tsp ground black pepper

Method

  1. Heat the oven to 425F.

  2. Peel and cube the sweet potatoes, toss with 2 tablespoons oil and a teaspoon of salt, and spread on a sheet pan. Roast 15 minutes.

  3. Mix the smoked paprika, garlic powder, brown sugar, remaining salt, and pepper and rub it all over the tenderloin with the remaining oil.

  4. Push the sweet potatoes to the edges, lay the pork in the center, and scatter the green beans around it.

  5. Roast 22 to 25 minutes, until the pork reaches 145F at the thickest point.

  6. Rest the pork 8 minutes before slicing so the juices stay in.
