Ingredients

  • 1 1/2 lb pork tenderloin
  • 2 tsp smoked paprika
  • 1/8 cup brown sugar
  • 1 1/2 tsp garlic powder
  • 14 oz coleslaw mix (bagged)
  • 3/4 lb apples
  • 3 tbsp mayonnaise
  • 3 tbsp apple cider vinegar
  • 2 tbsp extra virgin olive oil
  • 2 tsp kosher salt

Method

  1. Heat the broiler with a rack 6 inches below and line a sheet pan with foil.

  2. Mix the smoked paprika, brown sugar, garlic powder, and salt. Rub the tenderloin with oil and then the spice mix.

  3. Broil 16 to 18 minutes, turning every 5 minutes, until deeply browned and just firm at the center.

  4. While it cooks, toss the coleslaw mix with matchsticked apple, mayonnaise, cider vinegar, and a pinch of salt.

  5. Rest the pork 8 minutes, then slice into thick medallions.

  6. Serve the slices over the slaw with the pan juices spooned on top.
