Sausage and Potato Breakfast Burritos
Big foil-wrapped burritos of eggs, sausage, potato, and cheese. Make them ahead and reheat all week.

Ingredients
- 4 flour tortillas (burrito size)
- 1 lb breakfast sausage
- 16 oz frozen shredded hash browns
- 8 large eggs
- 6 oz shredded cheddar cheese
- 1 yellow onions
- 2 tbsp vegetable oil
- 1 1/2 tsp kosher salt
- 10 oz jarred salsa
- 4 tsp hot sauce (louisiana style)(optional)
Method
Brown the sausage in a large skillet over medium heat, breaking it up, 8 minutes. Lift it out and leave the fat behind.
Add the oil, the frozen hash browns, and the diced onion. Press them flat and cook 10 minutes without stirring much, so a crust forms, then turn and cook 5 minutes more.
Beat the eggs with the salt and scramble them softly in a second pan over low heat.
Warm the tortillas so they fold without cracking.
Lay a line of potato, sausage, egg, and cheese down the center of each, keeping the filling well clear of the edges.
Fold the sides in, roll tight, and toast the seam side down in a dry pan for 2 minutes. Serve with salsa.
