Chicken Fried Rice
Cold-rice fried rice with egg, peas, and carrots in a soy-sesame toss.

Ingredients
- 1 lb boneless chicken breast
- 1 1/2 cup long grain white rice
- 3 large eggs
- 8 oz frozen green peas
- 1/2 lb carrots
- 3 tbsp soy sauce
- 1 tbsp toasted sesame oil
- 2 tbsp vegetable oil
- 3 clove garlic
- 1 bunch green onions / scallions
Method
Cook the rice ahead and chill it, or use cold leftover rice. Cold rice fries much better than fresh.
Dice the chicken. Heat 1 tablespoon vegetable oil in a wide skillet over high and cook the chicken 5 minutes until browned. Move to a plate.
Add the remaining oil and the diced carrots. Cook 3 minutes, then add the minced garlic and the peas for 1 minute.
Push everything to one side, pour the beaten eggs into the empty space, and scramble until just set.
Add the cold rice, breaking up clumps, and stir-fry 3 minutes until it starts to crisp.
Return the chicken, add the soy sauce and sesame oil, and toss well. Finish with sliced scallions.
