Chinese-Style Tofu Scramble with Scallions
Crumbled tofu fried with turmeric, soy, and scallion until it browns at the edges. Cheap, vegan, ten minutes.

Ingredients
- 28 oz extra-firm tofu
- 1 bunch green onions / scallions
- 3 clove garlic
- 1/2 oz fresh ginger root
- 3 tbsp soy sauce
- 3/4 tsp ground turmeric
- 1 tbsp toasted sesame oil
- 2 tbsp vegetable oil
- 1 1/2 cup jasmine rice
- 1/2 tsp crushed red pepper flakes(optional)
Method
Press the tofu between paper towels under a heavy pan for 10 minutes to drive out water, then crumble it into rough curds.
Cook the rice according to package directions.
Heat the vegetable oil in a skillet over medium-high and add the minced garlic and ginger for 30 seconds.
Add the crumbled tofu and spread it in a single layer. Leave it 4 minutes without stirring so it browns, then toss and repeat.
Stir in the turmeric and soy sauce and cook 2 minutes more until the liquid is gone and the tofu is golden.
Off the heat, add the sesame oil, sliced scallions, and pepper flakes, and serve over rice.
