Crispy Tofu Vegetable Stir-Fry
Cornstarch-crisped tofu tossed with peppers and broccoli in a garlic-soy sauce.

Ingredients
- 28 oz extra-firm tofu
- 1 lb broccoli crowns
- 1 red bell pepper
- 1 1/2 cup jasmine rice
- 4 tbsp cornstarch
- 4 tbsp soy sauce
- 1 tbsp chili garlic sauce
- 1 tbsp toasted sesame oil
- 4 tbsp vegetable oil
- 4 clove garlic
- 3/4 oz fresh ginger root
- 1/2 cup vegetable broth
Method
Press the tofu between paper towels under a weight for 10 minutes, then cut into cubes. Start the rice.
Toss the tofu with 3 tablespoons cornstarch until evenly coated.
Heat 3 tablespoons vegetable oil in a nonstick skillet over medium-high and fry the tofu 8 minutes, turning occasionally, until browned on most sides. Move to a plate.
Whisk the soy sauce, chili garlic sauce, broth, sesame oil, and remaining cornstarch.
Add the last of the oil to the pan with the broccoli and sliced pepper and 3 tablespoons water. Cover 3 minutes, then add the minced garlic and ginger for 30 seconds.
Return the tofu, pour in the sauce, and toss 1 minute until thick and glossy. Serve over rice.
