Weeknight Chicken Tikka Masala
Chicken thighs simmered in a spiced tomato cream sauce, the kind you spoon over rice and mop up with naan.

Ingredients
- 1 1/2 lb boneless chicken thighs
- 1/2 cup plain greek yogurt
- 1 yellow onions
- 4 clove garlic
- 1 oz fresh ginger root
- 2 tbsp vegetable oil
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 15 oz canned crushed tomatoes
- 1/2 cup heavy whipping cream
- 1 1/2 cup basmati rice
Method
Cut the chicken into large chunks and toss with the yogurt and half the spices. Leave it while you prep the rest.
Start the basmati rice according to the package.
Cook the diced onion in the oil over medium-high heat until browning at the edges, 6 to 7 minutes. Add the grated ginger, garlic and remaining spices for one minute.
Add the chicken with its marinade and cook 5 minutes, stirring, until it loses its raw color.
Pour in the crushed tomatoes, season with salt and simmer 15 minutes until thickened.
Stir in the cream, warm through without boiling, and serve over the rice.
