Ingredients

  • 30 oz canned chickpeas
  • 16 oz frozen chopped spinach
  • 2 tbsp unsalted butter
  • 1 yellow onions
  • 4 clove garlic
  • 1 oz fresh ginger root
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 cup heavy whipping cream
  • 1 1/2 cup basmati rice
  • 1 lemon

Method

  1. Start the basmati rice.

  2. Cook the diced onion in the butter until golden, 8 minutes.

  3. Add the garlic, grated ginger, curry powder and cumin for one minute.

  4. Stir in the thawed spinach and a splash of water and cook 5 minutes.

  5. Add the drained chickpeas and simmer 8 minutes, then stir in the cream and season with salt.

  6. Finish with lemon juice and serve over the rice.
