Cod Braised in Tomatoes and Olives

Ingredients

  • 1 1/2 lb cod fillets (frozen)
  • 28 oz canned diced tomatoes
  • 3 oz sliced black olives
  • 1 oz capers
  • 1 yellow onions
  • 5 clove garlic
  • 3 tbsp extra virgin olive oil
  • 1 1/2 tsp dried oregano
  • 1/4 tsp crushed red pepper flakes
  • 1 1/2 tsp kosher salt
  • 1/4 bunch fresh flat-leaf parsley(optional)

Method

  1. Thaw the cod fillets and pat them dry.

  2. Heat the olive oil in a wide skillet over medium. Cook the sliced onion 6 minutes, then add the sliced garlic, oregano, and red pepper flakes for 1 minute.

  3. Add the diced tomatoes with their juice, the sliced olives, the capers, and the salt. Simmer 10 minutes until slightly thickened.

  4. Nestle the cod fillets into the sauce and spoon some over the top.

  5. Cover and simmer gently 8 to 10 minutes, until the fish flakes easily.

  6. Scatter with parsley and serve with rice or crusty bread for the sauce.
