Ingredients

  • 1 1/2 cup brown/green lentils
  • 7 cup vegetable broth
  • 3/4 lb carrots
  • 1/2 bunch celery
  • 1 yellow onions
  • 4 clove garlic
  • 14 1/2 oz canned diced tomatoes
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 3 tbsp extra virgin olive oil
  • 2 tsp kosher salt
  • 1 lemon

Method

  1. Cook the diced onion, carrot, and celery in the olive oil over medium heat for 8 minutes.

  2. Add the minced garlic, cumin, and smoked paprika and cook 1 minute until fragrant.

  3. Rinse the lentils and add them with the diced tomatoes, the broth, and the salt.

  4. Bring to a boil, then simmer partly covered for 30 minutes, until the lentils are soft.

  5. Mash a ladleful against the side of the pot and stir it back in to thicken the soup.

  6. Finish with the juice of the lemon, which is what keeps it from tasting flat.
