Ingredients

  • 1 cup jasmine rice
  • 8 cup vegetable broth
  • 1 oz fresh ginger root
  • 1 bunch green onions / scallions
  • 2 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tsp kosher salt
  • 1/4 cup roasted peanuts(optional)

Method

  1. Rinse the rice twice, then put it in a heavy pot with the broth and sliced ginger.

  2. Bring to a boil, then drop the heat to the lowest simmer that still shows bubbles.

  3. Cook 45 to 50 minutes, stirring every ten minutes and scraping the bottom so nothing catches. The grains should collapse into a loose, creamy porridge.

  4. Loosen with hot water if it thickens past the texture you want. It sets up more as it cools.

  5. Season with the salt and soy sauce off the heat.

  6. Ladle into bowls and top with sliced scallion, a drizzle of sesame oil, and crushed peanuts if you like the crunch.
