Spanish Potato Tortilla
Potatoes and onion cooked slow in olive oil, then set with egg into a thick cake. Good hot, warm, or cold.

Ingredients
- 1 1/2 lb yukon gold potatoes
- 1 yellow onions
- 8 large eggs
- 8 tbsp extra virgin olive oil
- 2 tsp kosher salt
- 1/2 tsp ground black pepper
- 1/4 bunch fresh flat-leaf parsley(optional)
Method
Peel the potatoes and slice them thin, then slice the onion.
Heat the olive oil in a 10-inch skillet over medium-low and add the potatoes and onion with half the salt. Cook 20 minutes, turning gently, until completely tender. They should poach in the oil, not fry, so keep the heat down.
Drain in a sieve set over a bowl, keeping the oil.
Beat the eggs with the remaining salt and pepper, then fold in the warm potatoes and let them sit 5 minutes.
Wipe the pan, add 2 tablespoons of the reserved oil, and pour in the mixture. Cook 8 minutes over low heat until the edges set and the center is still loose.
Slide it onto a plate, invert the pan over it, flip the whole thing back, and cook 4 minutes more. Rest 10 minutes before cutting into wedges.
