Ingredients

  • 8 large eggs
  • 1 red onion
  • 1 jalapeño peppers
  • 1/2 lb roma tomatoes
  • 1/2 tsp ground turmeric
  • 1 tsp ground cumin
  • 2 tbsp vegetable oil
  • 1 tsp kosher salt
  • 8 whole wheat sandwich bread
  • 3 tbsp salted butter
  • 1/2 bunch cilantro(optional)

Method

  1. Finely chop the red onion, chile, and tomato and mix them with the cilantro.

  2. Beat the eggs with the turmeric, cumin, and salt until the color is even, then stir in the chopped vegetables.

  3. Heat a teaspoon of oil in a small skillet over medium and pour in a quarter of the mixture, tilting the pan to spread it thin.

  4. Cook 2 minutes until the underside is set and speckled brown, then fold in half and slide onto a plate. Repeat for the rest.

  5. Toast the bread and butter it while hot.

  6. Serve each omelette with two slices of toast.
