Ingredients

  • 2 cup ricotta cheese
  • 1 sourdough loaf
  • 4 tbsp honey
  • 1 lemon
  • 6 oz blueberries
  • 1/2 tsp kosher salt
  • 1/2 cup almonds(optional)

Method

  1. Beat the ricotta with the lemon zest, a squeeze of the juice, and the salt for 2 minutes until it turns smooth and airy.

  2. Toast eight thick slices of bread until crisp at the edges.

  3. Spread the whipped ricotta over the warm toast in a thick layer.

  4. Scatter blueberries over and press them in lightly so they stay put.

  5. Drizzle honey across each slice and add chopped toasted almonds if you want the crunch.
