English Muffin Pizzas

Ingredients

  • 6 english muffins
  • 8 oz pizza sauce
  • 6 oz shredded mozzarella
  • 4 oz white button mushrooms
  • 1 green bell pepper
  • 1 1/2 tsp dried basil
  • 1 tbsp extra virgin olive oil

Method

  1. Heat the oven to 425F. Split the muffins and lay them cut-side up on a baking sheet.

  2. Toast them on their own for 4 minutes so they do not go soft under the sauce.

  3. Slice the mushrooms thin and cut the pepper into small dice. Toss both with the olive oil.

  4. Spoon sauce over each muffin half, scatter the vegetables on, sprinkle with the dried basil, and finish with the mozzarella.

  5. Bake 7 to 8 minutes until the cheese is bubbling and browned in spots. Eat while hot.
