Tomato and Olive Oil Toast with Feta

Ingredients

  • 1 sourdough loaf
  • 1 lb vine tomatoes
  • 4 tbsp extra virgin olive oil
  • 2 clove garlic
  • 4 oz crumbled feta cheese
  • 1 tsp kosher salt
  • 1 tsp dried oregano
  • 1/2 tsp ground black pepper

Method

  1. Cut the bread into eight thick slices and toast them until well browned and firm.

  2. Rub each hot slice with a cut clove of garlic. The rough toasted surface does the grating for you.

  3. Halve the tomatoes and grate them into a bowl, discarding the skins. Season with salt.

  4. Spoon the tomato onto the toast and let it soak in for a minute.

  5. Pour olive oil generously over each slice and crumble feta on top.

  6. Finish with oregano and black pepper.
