Ingredients

  • 16 oz canned refried beans
  • 8 corn tortillas
  • 4 large eggs
  • 3 tbsp vegetable oil
  • 1 avocado
  • 3 oz crumbled feta cheese
  • 6 oz jarred salsa
  • 1 lime

Method

  1. Heat 2 tablespoons of the oil in a skillet and fry the tortillas one at a time for about a minute a side until crisp. Drain on paper towels.

  2. Warm the refried beans in a small pan with a splash of water, stirring until they are smooth and spreadable.

  3. Fry the eggs in the remaining oil, basting the whites with hot oil so the edges frill and crisp.

  4. Spread each tostada thickly with beans.

  5. Top with a fried egg, sliced avocado, crumbled cheese, and a spoonful of salsa.

  6. Squeeze lime over everything just before eating.
