Hoisin Beef and Broccoli Ramen Bowls

Ingredients
- 1 lb flank steak
- 3 instant ramen noodles
- 3 tbsp hoisin sauce
- 2 tbsp soy sauce
- 1 lb broccoli crowns
- 3 clove garlic
- 1 oz fresh ginger root
- 1/2 bunch green onions / scallions
- 1 tbsp toasted sesame oil
- 1 tbsp vegetable oil
- 1 tbsp cornstarch
Method
Slice the flank steak thinly ACROSS the grain; cut with the grain and it will be chewy however briefly you cook it. Toss the slices with the cornstarch.
Boil the noodle blocks 2 minutes, discarding the seasoning packets, then drain and rinse under cold water.
Stir the hoisin, soy sauce and sesame oil together with 3 tablespoons of water.
Heat the vegetable oil in a wok over high heat and sear the beef in two batches, about 90 seconds each, so the pan stays hot. Move it to a plate.
Add the broccoli florets with a splash of water, cover, and steam 3 minutes until bright green and crisp-tender. Add the minced garlic and ginger for 30 seconds.
Return the beef, add the noodles and the sauce, and toss over high heat for 2 minutes until glossy. Top with sliced scallions.
