Peanut Noodles with Tofu
Linguine tossed in a peanut-soy sauce with crisp tofu, cucumber, and scallions.

Ingredients
- 28 oz extra-firm tofu
- 12 oz linguine
- 6 tbsp peanut butter
- 4 tbsp soy sauce
- 2 tbsp apple cider vinegar
- 1 tbsp toasted sesame oil
- 1 tbsp chili garlic sauce
- 3 clove garlic
- 1 cucumber
- 1 bunch green onions / scallions
- 3 tbsp vegetable oil
- 3 tbsp cornstarch
Method
Press the tofu 10 minutes, cube it, and toss with the cornstarch.
Fry the tofu in the vegetable oil over medium-high for 8 minutes until browned and crisp on most sides.
Boil the linguine and reserve a cup of pasta water before draining.
Whisk the peanut butter, soy sauce, vinegar, sesame oil, chili garlic sauce, and grated garlic, thinning with pasta water until it pours like heavy cream.
Toss the hot noodles with the sauce, adding more pasta water as needed to keep it loose.
Top with the tofu, matchsticks of cucumber, and sliced scallions.
