Sesame Ginger Tofu Rice Bowls
Baked ginger-soy tofu over rice with quick-pickled cucumber and shredded carrot.

Ingredients
- 28 oz extra-firm tofu
- 1 1/2 cup jasmine rice
- 4 tbsp soy sauce
- 1 oz fresh ginger root
- 2 tbsp toasted sesame oil
- 2 tbsp cornstarch
- 1 cucumber
- 1/2 lb carrots
- 3 tbsp white distilled vinegar
- 1/8 cup granulated white sugar
- 1/2 bunch green onions / scallions(optional)
- 1 tbsp sesame seeds(optional)
Method
Heat the oven to 425F. Press the tofu 10 minutes, then cube it.
Toss the cubes with 2 tablespoons soy sauce, 1 tablespoon sesame oil, and the grated ginger, then dust with the cornstarch.
Spread on a parchment-lined sheet pan and bake 28 to 30 minutes, turning once, until browned and firm.
Cook the jasmine rice according to package directions.
Toss the thinly sliced cucumber and shredded carrot with the vinegar and sugar and let sit 15 minutes.
Build bowls with rice, tofu, and drained pickles, and drizzle with the remaining soy sauce and sesame oil. Top with scallions and sesame seeds.
