Crunchy Peanut Cabbage and Tofu Bowls
Crisped tofu over shredded cabbage and carrots in a lime-peanut dressing.

Ingredients
- 28 oz extra-firm tofu
- 14 oz coleslaw mix (bagged)
- 1/2 lb carrots
- 5 tbsp peanut butter
- 2 lime
- 3 tbsp soy sauce
- 1 tbsp toasted sesame oil
- 2 tbsp pure maple syrup
- 2 tbsp cornstarch
- 3 tbsp vegetable oil
- 1/2 cup roasted peanuts(optional)
Method
Press the tofu between towels for 10 minutes, then cut into cubes and toss with the cornstarch.
Heat the vegetable oil in a nonstick skillet over medium-high and fry the tofu 10 to 12 minutes, turning, until browned and crisp on most sides.
Whisk the peanut butter with the soy sauce, lime juice, maple syrup, sesame oil, and enough hot water to make a pourable dressing.
Toss the coleslaw mix and shredded carrot with two-thirds of the dressing.
Divide the slaw into bowls and top with the crispy tofu.
Spoon over the remaining dressing and scatter with chopped peanuts.
