Hoisin Chicken Noodle Stir-Fry

Ingredients
- 1 lb ground chicken
- 3 instant ramen noodles
- 3 tbsp hoisin sauce
- 2 tbsp soy sauce
- 1 tbsp toasted sesame oil
- 1 tbsp vegetable oil
- 1/2 lb carrots
- 1 red bell pepper
- 3 clove garlic
- 1 oz fresh ginger root
- 1/2 bunch green onions / scallions
Method
Boil the noodle blocks for 2 minutes, discarding the seasoning packets. Drain and rinse under cold water so they stop cooking.
Cut the carrots into matchsticks and the pepper into thin strips. Mince the garlic and ginger and slice the scallions, keeping the green tops aside.
Heat the vegetable oil in a wok or wide skillet over high heat. Break the ground chicken in and cook without stirring for 2 minutes to get colour, then stir and cook through, 4 minutes total.
Push the chicken to one side, add the garlic, ginger and scallion whites, and stir for 30 seconds. Add the carrots and pepper and toss for 2 minutes so they stay crisp.
Add the noodles, the hoisin, the soy sauce and the sesame oil. Toss over high heat for 2 minutes until everything is coated and glossy.
Serve with the scallion greens cut over the top.
