Street Corn and Black Bean Bowls
Charred corn cut off the cob with black beans, crumbled cheese, avocado and lime over crisp lettuce.

Ingredients
- 4 corn on the cob
- 15 oz canned black beans
- 1 romaine lettuce
- 1 avocado
- 3 oz crumbled feta cheese
- 3 tbsp mayonnaise
- 2 lime
- 1/2 red onion
- 1 1/2 tsp chili powder
- 1/2 bunch cilantro
- 1 tsp kosher salt
Method
Grill or broil the shucked corn, turning often, until blackened in patches all over, about 10 minutes. Let it cool enough to handle.
Stand each cob on its end and cut the kernels off with a knife.
Whisk the mayonnaise with the juice of one lime, the chili powder and half the salt.
Toss the warm corn with the dressing, the drained black beans, the finely diced red onion and most of the chopped cilantro.
Shred the romaine and divide it between four bowls. Spoon the corn mixture over.
Top with sliced avocado, the crumbled feta, the remaining cilantro and the second lime cut into wedges.
