Smothered Pork Chops with Onion Gravy

Ingredients
- 1 1/2 lb boneless pork chops
- 1/3 cup all-purpose flour
- 2 tbsp vegetable oil
- 2 tbsp unsalted butter
- 2 yellow onions
- 3 clove garlic
- 2 cup chicken broth
- 1 tsp dried thyme
- 2 lb russet potatoes
- 1/2 cup whole milk
- 1 tsp paprika
Method
Boil the peeled, chunked potatoes until tender, then mash with the milk, half the butter and plenty of salt.
Season the chops with salt, pepper and paprika, then dredge them in the flour, saving the leftover flour.
Fry the chops in the oil over medium-high heat, 3 minutes a side, until well browned. Set them aside.
Melt the rest of the butter and cook the sliced onions 10 minutes, until soft and golden, then add the garlic.
Stir in 2 tbsp of the reserved flour, then whisk in the broth and thyme and simmer into a gravy.
Return the chops, cover and simmer 12 minutes until tender. Serve over the mash with the onion gravy.
