Ingredients

  • 1 1/2 cup brown/green lentils
  • 13 1/2 oz canned coconut milk
  • 3 cup vegetable broth
  • 1 1/2 cup basmati rice
  • 1 yellow onions
  • 4 clove garlic
  • 1 oz fresh ginger root
  • 1 tbsp curry powder
  • 2 tbsp coconut oil
  • 5 oz baby spinach
  • 2 tsp kosher salt
  • 1 lime

Method

  1. Start the basmati rice.

  2. Cook the diced onion in the coconut oil over medium for 6 minutes, then add the minced garlic and grated ginger for 1 minute.

  3. Stir in the curry powder and cook 1 minute.

  4. Add the rinsed lentils, the broth, the coconut milk, and the salt. Simmer 25 minutes, stirring occasionally, until the lentils break down and the curry is thick.

  5. Stir in the spinach until wilted.

  6. Finish with lime juice and serve over the rice.
