Ingredients

  • 15 oz canned chunk light tuna
  • 30 oz canned cannellini beans
  • 1 red onion
  • 5 oz spring mix salad greens
  • 10 oz cherry tomatoes
  • 4 tbsp extra virgin olive oil
  • 2 lemon
  • 1/2 bunch fresh flat-leaf parsley
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper

Method

  1. Slice the red onion very thin and soak it in cold water for 5 minutes to take off the raw edge, then drain.

  2. Whisk the olive oil with the juice of both lemons, the salt, and the pepper.

  3. Drain the beans and rinse them well. Drain the tuna.

  4. Toss the beans, tuna, onion, halved cherry tomatoes, and chopped parsley with most of the dressing. Break the tuna into large flakes rather than shredding it.

  5. Dress the spring mix with the rest and spread it on a platter.

  6. Pile the tuna and bean salad over the greens and serve with bread if you like.
